These Philly Cheesesteak Sliders with Hawaiian Rolls are an irresistible Game Day or party snack with seasoned shaved steak, tender sauteed onions and peppers, creamy melted provolone, a garlic mayo spread, and buttery soft rolls. These gooey, flavorful little sandwiches are perfect for feeding a crowd, and are a huge favorite here.

I love making these sliders for friends and family because every bite is seriously so good. They are a great hand-held snack for a gathering and can be a fun appetizer or a meal. So many little things give the sliders a ton of flavor. We love the steak seasoning, the garlic mayo, the melty provolone cheese, the sauteed onions and peppers with the steak, and the yummy garlic butter sauce on the rolls; they all add up to make these sliders the bomb. They are sooo good!

The seasoning I use for the steak I use all the time. I use both that and the garlic mayo on my shredded beef sliders, too, because they just taste great with beef. The garlic mayo is like a garlic aioli that tastes great with so many things. I adjust in different ways for different foods. Add some lemon juice, and it’s a great dip for fish. Add some chipotle, and you’ve a great chipotle crema topping. It’s the basis for lots of great sauces and dips, and gives these sliders a boost of flavor.

These come together very quickly. It just takes a few minutes to saute the peppers. For the shaved steak, it’s so thin, I just roll it up, cut it into slices, and then it takes just 1-2 minutes of cooking on each side. You can cook the peppers and steak in advance, make the garlic mayo ahead of time, and add them to the sliders just before baking, which is a great time saver as well.

Cheesesteak Sliders Substitutions

I know what it’s like when you don’t have everything on hand and the last thing you want to do is run to the store and pick something up. Here are a few ideas to substitute items on the ingredients list if needed:

  1. I bought shaved steak at the store that was already thinly sliced. You can also buy a ribeye steak, stick it in the freezer for 30 minutes or so for easier slicing, and slice very thinly. Ribeye steak is traditional for Philly cheesesteak. 
  2. We like using provolone cheese, but other popular cheeses with Philly cheesesteak include cheese whiz and American cheese.
  3. We make these with sauteed onions and peppers. Other toppings with Philly cheesesteaks can include mushrooms, fried onions, or hot peppers if you want to add or substitute for the sauteed onions and peppers.
  4. We love the garlic mayo with these sliders for the flavor and a bit of creaminess, but you can omit or just use regular mayonnaise if desired.
  5. We love the flavor of the steak with this seasoning, but if you have something else you want to use to season the steak with, go for it!
  6. The King’s Hawaiian rolls work great for these sliders, but other rolls can be used as well. I like using their Savory Butter variety, but their original sweet could be used.

Step-by-step Instructions for Philly Cheesesteak Sliders with Hawaiian Rolls

Step 1. In a small bowl, whisk together the mayonnaise, minced garlic, salt, and coarsely ground pepper. Cover with plastic wrap and place in the fridge while you make the sliders.

Step 2. In a large 12-inch skillet, heat the oil over medium heat, and add the onions and peppers. Sprinkle with ¼ teaspoon salt and ¼ teaspoon sugar. Stir with tongs, turning the onions and peppers as they cook until the peppers and onions are soft and the onions translucent, about 5-7 minutes. Set on a plate and set aside.

Step 3. Melt the butter in the skillet. Add 1 teaspoon of the Worcestershire sauce to the pan. Place half of the steak slices in the pan. Sprinkle ½ teaspoon of the steak seasoning over the steak. Cook for 1-2 minutes and turn the slices over to the other side. Sprinkle an additional ½ teaspoon of the steak seasoning mix on the steak slices and cook 1-2 minutes more until the steak is no longer pink. Transfer the steak to a plate and repeat the process, adding an additional teaspoon of Worcestershire sauce to the pan, adding the steak and seasoning, and cooking until the remainder of the steak is cooked. Add the steak to the plate.

Step 4. Using a long serrated knife, slice the King’s Hawaiian rolls in half. Place the bottom half of the rolls on the prepared baking sheet and turn over the top half of the rolls in the box the rolls come in. Spread the garlic mayo on both halves of the rolls.

Step 5. To the bottom half, add 6 slices of Provolone cheese, place the cooked steak evenly over the cheese, then the onions and peppers over the steak. Place the remaining Provolone cheese slices over the onions and peppers, and top with the other half of the King’s Hawaiian rolls.

Step 6. In a small microwaveable bowl, melt the butter. Whisk in the minced onions, Worcestershire sauce, and garlic salt. Using a pastry brush, brush the garlic butter spread over the rolls and sprinkle with dried or fresh parsley. Cover the rolls with aluminum foil and bake for 12-15 minutes at 350 degrees Fahrenheit.

Tips

  • I could almost call my steak seasoning my house seasoning. I change it up and add other ingredients at times, but it’s really great with beef, and it gives the steak here great flavor.
  • The garlic mayo is basically garlic aioli, and it is flavorful and versatile. Try making extra or use any leftovers as a dip for vegetables, fries, or chips! You can also add lemon juice to it as a dip for fish, or chipotle for a chipotle crema. It’s the basis for lots of different dips and sauces!

How to store Philly Cheesesteak Sliders?
Cover in an airtight container and refrigerate once fully cooled for 3-4 days. I find these sliders have the best texture the day they are served, but they still taste great the next day. You can also freeze them once they are fully cooled in an airtight container for 2-3 months.
How to reheat Philly Cheesesteak Sliders with Hawaiian rolls?
Put in a pan and cover with foil to reheat in the oven.  Warm at 350 for 10-15 minutes or so.  You can also reheat in the air fryer at 350 for 3-5 minutes to keep the bread crisp and get the cheese melted. Microwaving until warm in the microwave is also a possibility, but the rolls may get a little soggy. 
Can I make these sliders in advance?
a. You can absolutely saute the onions and peppers and cook the steak in advance. They all last 3-4 days in the fridge, so I would cook them a day or two before serving. You can also mix up the garlic mayo in advance, which lasts 3-7 days in the fridge. Make sure any part prepared in advance is stored separately in an airtight container. I don’t recommend preparing and cooking the sliders in advance, as the texture is best the day you bake them, but you can prepare most everything in advance for a quick assembly the day you serve them.
b. You could also assemble the sliders earlier in the day that you are serving (except for the garlic butter spread) and cover well with plastic wrap. Take the sliders out and remove the plastic wrap while the oven preheats. Prepare the garlic butter spread, brush it on, and bake.

Ingredients

  • Sliders:

  • ½ cup mayonnaise

  • 1 teaspoon minced garlic (about 1 garlic clove)

  • Pinch salt

  • Pinch coarsely ground pepper

  • 1 -2 tablespoons olive oil

  • ½ of a red bell pepper, sliced

  • ½ of a green bell pepper, sliced

  • ½ of a yellow onion, sliced

  • ¼ teaspoon salt

  • ¼ teaspoon granulated sugar

  • 2 tablespoons butter

  • 1 -1.5 pounds shaved steak

  • 2 teaspoons Worcestershire sauce

  • 12 count King’s Hawaiian Rolls (I like their Savory Butter rolls in this recipe but their Original Sweet could be used)

  • Steak Seasoning:

  • 1 teaspoon salt

  • 1 teaspoon coarsely ground pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • Garlic Butter Spread:

  • ¼ cup butter

  • ½ tablespoon dried minced onions

  • ¼ teaspoon Worcestershire sauce

  • ¼ teaspoon garlic salt

  • 1 -2 teaspoons dried parsley flakes or 1 tablespoon fresh parsley

Directions

  • Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with foil or parchment paper.
  • In a small bowl, whisk together the mayonnaise, minced garlic, salt, and coarsely ground pepper. Cover with plastic wrap and place in the fridge while you make the sliders.
  • On a cutting board, roll up the shaved steak and cut into slices with a sharp knife; you may need to do this in two batches. Mix together in a small bowl the steak seasoning ingredients.
  • In a large 12-inch skillet, heat the oil over medium heat, and add the onions and peppers. Sprinkle with ¼ teaspoon salt and ¼ teaspoon sugar. Stir with tongs, turning the onions and peppers as they cook until the peppers and onions are soft and the onions translucent, about 5-7 minutes. Set on a plate and set aside.
  • Melt the butter in the skillet. Add 1 teaspoon of the Worcestershire sauce to the pan. Place half of the steak slices in the pan. Sprinkle ½ teaspoon of the steak seasoning over the steak. Add the steak to the plate.
  • Using a long serrated knife, slice the King’s Hawaiian rolls in half. Place the bottom half of the rolls on the prepared baking sheet and turn over the top half of the rolls in the box the rolls come in. Spread the garlic mayo on both halves of the rolls. To the bottom half, add 6 slices of Provolone cheese, place the cooked steak evenly over the cheese, then the onions and peppers over the steak. Place the remaining Provolone cheese slices over the onions and peppers, and top with the other half of the King’s Hawaiian rolls.
  • In a small microwaveable bowl, melt the butter. Whisk in the minced onions, Worcestershire sauce, and garlic salt. Using a pastry brush, brush the garlic butter spread over the rolls and sprinkle with dried or fresh parsley. Cover the rolls with aluminum foil and bake for 12-15 minutes at 350 degrees Fahrenheit.
  • Slice into pieces (I like using my bench scraper) and serve immediately while the rolls are hot and the cheese melted.

Notes

  • We think the texture of these sliders is best the day you bake them, but you can do some prep ahead of time. The steak, onions, peppers, and garlic mayo can be prepared 1-2 days in advance and then quickly assembled the day of serving to save time if needed. You could also assemble the sliders the morning of serving, except for the garlic butter spread and cover with plastic. Remove the plastic, brush on the garlic butter mixture, and bake when time to serve.
  • I have found shaved steak both at my local grocery store and at Walmart. If you can’t find it in a store near you, you can freeze a ribeye steak for about 30 minutes to help with slicing, and then slice it very thinly before cooking.
  • We like using provolone cheese, but other popular cheeses with Philly cheesesteak include cheese whiz and American cheese. We also make these with sauteed onions and peppers. Other toppings with Philly cheesesteaks can include mushrooms, fried onions, or hot peppers if you want to add or substitute for the sauteed onions and peppers.
  • You can use a sharp serrated knife or a bench scraper to cut the rolls apart from one another. I prefer the bench scraper if you have one. It cuts through everything easily and doesn’t squish the rolls at all.
