This Easy Cucumber Tomato Feta Salad is the ultimate fresh and flavorful summer salad with crunchy cucumbers, juicy tomatoes, crisp red onion, creamy feta cheese, and a simple, bright vinaigrette. The cucumber tomato combination is a favorite of mine. Add the feta, red onion, and dressing, and it is so flavorful. This salad has been on repeat all summer, and we love it with so many things. It’s delicious with a variety of proteins and carbs. We love it with our Yogurt Marinated Chicken with a side of rice or our Grilled Chicken Gyros. It’s delicious with many Greek/Mediterranean foods like grilled chicken, lamb, souvlaki, fish, falafel, pita bread, or part of a mezze spread with hummus, tzatziki, & kalamata olives. It’s a great side for barbecues, potlucks, and picnics as well.

I know what it’s like when you don’t have everything on hand, and the last thing you want to do is run to the store and pick something up. Here are a few ideas to substitute items on the ingredients list if needed:

  1. You can substitute a regular cucumber in place of the English cucumber, but I would cut it in half lengthwise and scrape out the seeds before slicing, as regular cucumbers are more watery
  2. Feel free to substitute cherry or grape tomatoes or larger varieties of tomatoes.
  3. I have had this salad with Kalamata olives and avocado as well. You can add fresh herbs like mint, basil, or parsley. It’s very customizable for what your family likes.

Step-by-step Instructions for Cucumber Tomato Feta Cheese Salad

Step 1. In a medium-sized bowl, gently combine the tomatoes, cucumbers, and red onion.

Step 2. In a small-sized bowl, whisk together the oil, red wine vinegar, salt, oregano, and coarsely ground black pepper.

Step 3. Place the tomatoes, cucumbers, and red onion in a serving bowl or platter, or individually plate the vegetables. Drizzle the desired amount of dressing over the salad and top with the crumbled Feta cheese.

Step 4. Serve immediately. This salad is best served right after the dressing is drizzled over the salad.

  • English cucumbers are best to use as they release less water into the salad.
  • The salad is best immediately after the dressing is added, so I wouldn’t add the dressing and Feta cheese to the vegetables until right before serving.

a. This salad is best immediately after it is tossed together and the dressing added. It will last up to 2-3 days in the fridge in an airtight container, though the texture of the veggies quickly declines after combining with the dressing. If possible, don’t add all the dressing at once when eating.  If you know you are going to save some salad for later, store the salad ingredients and dressing separately.  Once the dressing is applied, the vegetables tend to get soggy, and the cheese breaks down.
b. Due to the high moisture content of the tomato, once the salad is tossed, it doesn’t last long before getting soggy. If possible, store the salad ingredients separately in separate containers.  
Can the ingredients be prepared in advance?
a. You can chop the vegetables up to 24 hours in advance to make meal preparation faster the day you serve the salad. Store the vegetables in separate airtight containers in the fridge.
b. You can make the dressing in advance as well; it lasts for up to a week in the fridge in a covered container. Store it separately from the vegetables. Put it out at room temperature for 15 minutes before serving, and shake in its container or whisk to re-emulsify the ingredients.
c. The salad is best immediately after the dressing is added, so I wouldn’t add the dressing to the vegetables until right before serving.

  • 1/2 red onion, thinly sliced and halved

  • 1/4 cup olive oil

  • 2 tablespoons red wine vinegar

  • 1/2 teaspoon salt
