This casserole is truly the ultimate comfort breakfast casserole with soft biscuits baked with an egg and cheese custard and smothered in a homemade creamy sausage gravy. I love how easy it is to make using store-bought biscuit dough. They bake up perfectly soft and fluffy, not soggy, yet each bite with the sausage gravy is so flavorful, creamy, and delicious. I have made this for football team breakfasts, my husband’s work brunches, for family and friends, and every time I am asked for the recipe. I even won a fun little award for best brunch dish once.
The sausage gravy is so good. This is the recipe I use for sausage gravy when serving biscuits and gravy by itself. It’s creamy, with just enough pepper, sausage, and creamy gravy for that classic sausage gravy flavor.
I love that it can be made just before serving, or you can make it the night before and bake it in the morning. You can also make the breakfast casserole the night before, make the gravy in the morning, and then bake. This is a great dish for a weekend brunch, brunch potluck, a breakfast dinner, or a holiday breakfast.

What you need to make this Biscuit & Gravy Casserole

You will need the following ingredients:
- Pork sausage (I like Jimmy Dean regular)
- Butter
- Flour
- Milk
- Salt
- Coarsely ground pepper
- 16.3-ounce buttermilk biscuit dough (I use Pillsbury Grands)
- Eggs
- Shredded cheddar cheese
Biscuits and Gravy Casserole Substitutions
I know what it’s like when you don’t have everything on hand, and the last thing you want to do is run to the store and pick something up. Here are a few ideas to substitute items on the ingredients list if needed:
- You could use a different dough or bread than the Buttermilk Biscuit Dough we use. You could try this with a different type of breakfast biscuit dough or cut up baked bread cubes like French bread, croissants, or challah bread.
- You could substitute the cheddar cheese with other cheeses or cheese combinations like cheddar jack, pepper jack, colby jack, or a different cheese of your choice.
- Feel free to garnish with chives or scallions, or add onions and cook with the sausage gravy.
- You could add vegetables to the sausage gravy, or layer cooked vegetables with the breakfast casserole. Onions, mushrooms, peppers, spinach, or other vegetables could be used.
- Instead of using pork sausage, you could substitute with turkey sausage or bacon, or add bacon to the sausage. You can also try flavored or spicy sausage if desired.
- I highly recommend milk with the gravy instead of half and half or cream, because the gravy really thickens as it cooks, sits, and bakes.
Step-by-step Instructions


Step 1. In a Dutch oven casserole dish or heavy-bottomed skillet, over medium heat, brown the sausage and drain well. Set aside on a plate.
Step 2. Add the butter to the pan, let it melt. Whisk in the flour and cook, whisking consistently for 1-2 minutes to cook the flour. Gradually add in the milk, whisking consistently to keep the gravy from clumping. Add in the sausage, salt, and pepper, and continue to stir with a spoon or spatula over medium heat for several minutes until the mixture thickens. Turn the heat to low and stir occasionally while you make the casserole.


Step 3. Cut each biscuit into fourths and spread evenly in a single layer in the bottom of the prepared pan. In a medium-sized bowl, whisk together the eggs, milk, salt, and pepper. Sprinkle the cheese over the biscuits and pour the egg mixture over the cheese and biscuits.
Step 4. Pour the sausage gravy over the top.

Step 5. Bake in the oven for 35-45 minutes, covering with tented foil if needed after 35 minutes to avoid excessive browning. In my oven, it takes about 45 minutes. Bake until the casserole is set, and the biscuits are puffed up and golden.
Tips

- This casserole can be prepared right before serving or the night before. If you are preparing it the night before, bring it to room temperature for at least 30 minutes before baking, and increase the baking time by an additional 10-15 minutes until the center of the casserole is cooked through. Tent with foil towards the end of baking to prevent excessive browning if needed.
