This Potato Salad with Dill Pickles is a favorite side dish for summer barbecuing. I’ve always been a huge potato salad fan, and this is a family favorite. We love the flavorful creamy dressing. With mayo, a little mustard, pickle juice, vinegar, salt, pepper, and Greek seasoning (the secret ingredient), the dressing really enhances the flavor of the salad.
I first discovered Greek seasoning when reading through some Southern cookbooks years ago. I kept seeing Greek seasoning as an ingredient in pasta and potato salads. It really is delicious with this salad, I love it with the slightly briny flavor from the pickles, and pickle juice in the salad, and the creamy mayo base.

What you need to make Potato Salad with Dill and Pickles

You will need the following ingredients:
- Medium-sized red potatoes
- Mayonnaise
- Dijon mustard
- Pickle juice
- Vinegar
- Salt, divided
- Greek seasoning (I like Cavender’s)
- Coarsely-ground pepper
- Celery
- Dill pickles
- Green onions
- Hard-boiled eggs
- Optional garnish: Chopped fresh dill and paprika
Potato Salad with Pickles Substitutions
I know what it’s like when you don’t have everything on hand and the last thing you want to do is run to the store and pick something up. Here are a few ideas to substitute items on the ingredients list if needed:
- Instead of using 100% mayonnaise, you could use half sour cream and half mayonnaise.
- You can use a coarse mustard or yellow mustard in place of the Dijon.
- Sweet pickles could substitute for dill pickles.
- You could use a red or yellow onion in place of the green onions.
- If you don’t have Greek seasoning, you can add another 1/2 teaspoon of salt in place of it, but it will lack flavor. Cavender’s Greek Seasoning has salt, pepper, garlic, onion, oregano, parsley, and sugar, as well as other seasonings and spices, which you could try adding a dash of, but I haven’t recipe tested that or developed my own Greek seasoning to recommend. It’s available at my local Kroger brand grocery store (Fry’s in Arizona) or you can by Cavender’s Greek Seasoning from Amazon.
Step-by-step Instructions for Potato Salad with Dill Pickles


Step 1. In a large pot, fill the pot with enough water to cover the potatoes, add 1 teaspoon of salt, and bring the water to a boil. Carefully add potatoes to the water and cook the potatoes until the tip of a sharp knife or a fork can easily pierce them, checking after 12-14 minutes. Do not overcook the potatoes, or they will fall apart easily in the salad. Drain the potatoes in a colander and pour them into a large bowl. Let them cool until they aren’t too hot to handle.
Step 2. While the potatoes cool, in a small bowl, whisk together the mayonnaise, Dijon mustard, pickle juice, vinegar, ½ teaspoon salt, Greek seasoning, and pepper.


Step 3. Add the celery, dill pickles, green onions, and mayonnaise mixture to the potatoes. Stir gently to combine. Add the hard-boiled eggs and toss gently again. Serve at room temperature or cover and refrigerate up to 24 hours.
Step 4. Sprinkle with dill and paprika, if desired, before serving.

- We love the added flavor from the Greek seasoning in the dressing. I use Cavender’s All Purpose Greek Seasoning, available at my local Kroger brand grocery store (Fry’s in Arizona). If your local store doesn’t carry it, you can also buy Cavender’s Greek Seasoning from Amazon. How to store potato salad? Can you make it ahead of time? |
a. A mayonnaise-based potato salad lasts 3-4 days, covered, in the fridge. To keep it food safe, it should not be out at room temperature for more than 2 hours. If you are outside in the heat, it is only safe for one hour if left out and not refrigerated. If it has been left out in the heat, I wouldn’t keep it to serve for later as mayonnaise and eggs are more susceptible to bacterial growth. b. You can freeze potato salad, but the texture and taste will be less desirable. The mayonnaise can separate once frozen, and the potatoes become soggy. c. You can absolutely make the potato salad in advance, I wouldn’t recommend more than 1-2 days before serving for best presentation. Once stored in the fridge, the potatoes will absorb some of the mayonnaise mixture. If making the potato salad in advance, check the seasoning and add additional mayonnaise and seasoning if needed right before serving. |
